Instructions

Chef Paul's Suggested Recipe: Magic Baked Salmon: Makes 1 serving. 1 salmon fillet (about 6 oz), skinless; 2 tsps Chef Paul Prudhomme's Magic Salmon Seasoning; unsalted butter, melted or oil. Oven Preparation: Preheat oven to 450 degrees F. Brush top and sides of the salmon fillets with melted butter. Lightly brush a small sheet pan with melted butter. Season top and sides of salmon fillet with Magic Salmon Seasoning. (If the fillet is thick, use a little more Magic Salmon Seasoning). Press seasoning in gently. Place the fillet on sheet pan and bake until top is golden brown and fillet is just cooked through, about 4-6 minutes (135-140 degrees F inside temperature). Serve immediately. Do not over cook. Microwave Preparation: Place Magic Salmon Seasoning on a plate and lightly roll salmon fillet in the seasoning until all sides are covered and all seasoning has been applied. Place the fillet, flat side down, on a microwave safe plate. Place the fillet in the microwave and cook until the temperature in the thickest part of the fillet reaches 135-140 degrees F, about 3 to 3-1/2 minutes. Note: Ovens and microwaves vary considerably in power, and the size, shape and temperature of the fillet can affect the cooking time; so, it's best to use the temperature as a guide instead of the cooking time. Use a reliable thermometer. When cooking on a grill with top down, either wrap salmon in foil or cook in a metal pie (or similar) pan until the fillet is soft and pink inside (135-140 degrees F).
