Instructions

You Will Need: 1 cup milk (or buttermilk). 1/3 cup butter, melted. 2 eggs. Tip: Toasted, cubed cornbread makes delicious croutons. 1. Heat: Heat oven to 375 degrees F. Lightly grease baking pan, cast iron skillet or muffin pan. 2. Whisk: Whisk together milk, butter and eggs. Add cornbread mix and stir until blended. Spoon batter into pan or fill muffin cups 2/3 full. Do not eat raw batter. 3. Bake: Bake as directed below or until light golden brown. For muffins, cool 5 minutes; gently loosen and remove from pan. Cool completely and store in tightly covered container. Yield: 8x8 or 9x9-inch pan; 375 degrees F; 24-29 minutes bake time. 9-inch cast iron skillet; 375 degrees F; 20-22 minutes bake time. 12 Standard muffins; 375 degrees F; 16-18 minutes bake time. High Altitude (over 5,000 feet): Prepare as directed, adding an additional 2 tablespoons milk.
