SausageWorks Sausage, Spinach & Tortellini Soup
We love using SausageWorks “The Florentine” here because of its spinach and cheese filling, which complement the flavors of the soup. But feel free to experiment with any of our varieties to find your favorite.
Ingredients
- 1 Tablespoon Olive Oil
- 1 Pound SausageWorks “The Florentine,” Decased
- 1/2 Cup Onion, Diced
- 1 Tablespoon Garlic, Minced
- 1 28-Ounce Can Crushed Tomatoes
- 1 32-Ounce Box Chicken Or Vegetable Broth
- 2 Tablespoons Fresh Basil, Chopped
- 1 Teaspoon Salt
- 1/2 Teaspoon Pepper
- 1 9-Ounce Package Refrigerated Tortellini
- 2 Cups Fresh Spinach
- Freshly Grated Parmesan, For Serving
Directions
In large pan, heat oil over medium-high. Add onion and sauté until soft. Add garlic and sausage and continue to cook until sausage is no longer pink. Stir in tomatoes, broth, basil, salt and pepper. Bring to boil, then reduce heat and simmer 20-30 minutes. Add tortellini and spinach and continue simmering until pasta is tender, about 10 minutes. Serve with freshly grated parmesan.
