Mango & Blueberry Cobbler
The welcome addition of mangoes and cinnamon adds a whole new dimension to this comfort food classic. Kick it up another notch by serving with a dollop of vanilla ice cream.
Ingredients
- 3 Cups Pick & Prep Sliced Mangoes
- 2 Cups Fresh Blueberries
- 1 Tablespoon Lemon Juice
- 1/3 Cup + 4 Tablespoons Sugar, Divided
- 2 Teaspoons Cornstarch
- 2 1/2 Teaspoons Cinnamon, Divided
- 1 Teaspoon Ground Ginger, Divided
- 1/2 Cup Flour
- 1/2 Teaspoon Baking Powder
- 1/4 Teaspoon Baking Soda
- Pinch Salt
- 1/3 Cup Buttermilk
Directions
**For the Filling: In large bowl, mix mangoes, blueberries and lemon juice. In smaller bowl, mix 1/3 cup sugar, cornstarch, 2 teaspoons cinnamon and 1/2 teaspoon ginger. Combine with fruit, stir gently to combine. **For the Topping: In large bowl, combine flour, 3 tablespoons sugar, baking powder, 1/2 teaspoon ginger, 1/4 teaspoon cinnamon, baking soda and salt. Add buttermilk; mix well. **To assemble Cobbler: Spoon fruit filling into 11x7” baking dish coated with non-stick spray. Drop topping onto fruit in 6 equal portions. Mix remaining 1 tablespoon sugar and 1/4 teaspoon cinnamon in small bowl. Sprinkle over topping. Bake 35-40 minutes or until fruit is bubbly and topping is browned. Serve warm.
