Winter Wonderland Coconut Cake
Bake our Duncan Hines® Dolly Parton’s Southern Coconut Cake recipe, frost and decorate with coconut and sprinkles to look like a fresh snowfall. Top with colorful pretzel trees and listen to the compliments pour in at your next holiday party!
Ingredients
- PAM® Baking Spray
- 1 pkg (15.25 oz each) Duncan Hines® Dolly Parton's Southern Style Coconut Cake Mix
- 1 cup milk
- 1/2 cup unsalted butter
- 4 eggs
- 1/2 cup candy melts (pink, blue, and/or white)
- 8 thin pretzel sticks
- white nonpareils, sanding sugar
- 1 container (16 oz each) Duncan Hines® Dolly Parton's Creamy Buttercream Frosting
- 2 cups sweetened flaked coconut
- additional sanding sugar, white sugar crystal sprinkles
Directions
Preheat oven to 350°F. Spray two 8-inch round pans with baking spray. Blend cake mix, milk, melted butter and eggs in a large bowl with an electric mixer on low speed until moistened, about 30 seconds. Beat on medium speed 2 minutes. Pour batter into pans and bake 26 to 32 minutes, until toothpick inserted in center comes out clean. Cool on wire rack 15 minutes. Remove from pans and cool completely. Melt candy melts according to package directions. Pour melted candy into piping bag or freezer bag. Cut off a very small corner of the bag. Line a baking sheet with waxed paper and place pretzels on paper. Drizzle melted candy on pretzels starting 1-inch from the bottom to make tree shapes. Get creative and fun, these should look unique, not perfect! Add some nonpareils or sanding sugar if you like. Refrigerate 10 minutes, until candy is hardened. Place one cooled cake layer on serving plate. Spread about 1/2-cup frosting on first layer. Top with second cake layer. Frost entire cake with remaining frosting. Press coconut around top and sides of cake. Decorate the top of the cake with nonpareils, sanding sugar and sugar crystals to look like snow. Just before serving, poke the trees into the top of the winter wonderland coconut cake.
