Strawberry Chia Seed Jam
This 3-ingredient jam gets its consistency from healthy chia seeds and uses honey rather than refined sugar, making it a healthy alternative to conventional jam.
Ingredients
- 1 Pound Fresh Strawberries, Hulled And Sliced (Or 1 Pound Bag Frozen Strawberries, Thawed)
- 3-4 Tablespoons Honey
- 2 Tablespoons Chia Seeds
Directions
In medium saucepan, add strawberries and honey and heat over medium to soften berries, stirring to combine. Once softened, mash with potato masher or fork. Allow mixture to come to slow boil, stirring almost continually. When large bubbles surface, add chia seeds. Turn heat to low and continue stirring another 15 minutes. Remove pan from stove. Pour jam in to quart jar and allow to cool on counter. Once cool, cover tightly, and refrigerate to thicken. NOTES: If you prefer a smoother texture, pulse mixture in blender a few times before pouring in to jar. Because this recipe contains no preservatives, you will need to use or freeze it within a few days.
