Sauteed Shiitake Mushrooms
The smoky, rich flavor of shiitake mushrooms is becoming popular in the US for their health-promoting benefits. This recipe can be served as a side dish or over fish or poultry.
Ingredients
- 1 Pound Fresh Shiitake Mushrooms
- 3 Tablespoons Low-Sodium Chicken Or Vegetable Broth
- 2 Cloves Garlic
- 2 Tablespoons Extra Virgin Oil
- Salt & Pepper To Taste
- Optional: 2 Tablespoons Each Of Fresh Rosemary, Oregano Or Feta Cheese
Directions
Chop garlic & let sit for 5 minutes to enhance its health-promoting properties. Remove stems from mushrooms & slice or chop (depending on preference). Heat broth in skillet. When broth begins to steam, add mushrooms & garlic then cook covered for 3 minutes. Remove skillet cover & let cook for 4 more minutes. Toss with olive oil and season with salt & pepper and other optional ingredients.
