Healthy Turkey Taco
Spice up your lunch with some Mexican flavor.
Ingredients
- 1 Pound Of Lean Ground Turkey
- 1 Pack Of Taco Seasoning – Or Add Different Spices To Taste
- About 1/3 Of A Cup Of Water
- 1 Full Can Of Diced Tomatoes
- 1 Green Pepper - sliced
- 1 Cup Of Fresh Tomatoes – Diced
- 1 Cup Of Onions – Finely Chopped
- 1/4 Of Shredded Cheddar Cheese (Use Fat Free For A Healthier Option)
- Spoonful Of Plain Greek Yogurt (For Topping)
- Spoonful Of Salsa (For Topping)
- Whole Wheat Tortilla (If You Want To Serve As A Soft Taco Instead Of A Taco Salad)
Directions
Cook turkey until browned and then drain. Mix in the taco seasoning (or spices). Mix in the diced tomatoes, including the liquid in the can and water. Stir well. Continue to cook over medium heat until majority of liquid has evaporated. If making for tomorrow’s lunch, place taco mixture in container and refrigerate. In the morning, microwave taco mixture to heat. Add the meat, cheese, tomatoes, onions to the tortillas and microwave to melt cheese. Wrap tacos in foil or place in insulated container to keep warm during the day. Pack Greek yogurt and salsa in an insulated container to keep cool.
