Easy Crustless Quiche
Make these ahead for a quick protein-packed meal to grab and go or enjoy on the days you have a little extra time.
Ingredients
- 2 Tablespoons Olive Oil
- 1 Cup Diced Green or Red Pepper
- 1 Cup Diced Onions (Optional)
- 1 Cup Diced Ham
- 6 Large Eggs
- 1-1/2 Cups Cheddar or Swiss Cheese
- 3/4 Cup Heavy Cream
- 3/4 Cup Whole Milk
Directions
Preheat oven to 425 degrees with rack in the middle. Spray a muffin tin with pan spray. Heat olive oil in pan, add peppers and onions and sauté for 3-4 minutes. Add ham and cook for another 2-3 minutes. Place one tablespoon of the mixture into each muffin tin. Combine eggs, cheese, cream, and milk in a bowl. Pour an equal amount into each muffin tin. Bake for 20-25 minutes until tops are brown and center is set. Cool and remove from pan. Place in individual freezer bags in serving sizes you will need for later. Place in the microwave for 15-30 seconds and you are ready to go!
