Easy Crustless Quiche

Ingredients

  1. 2 Tablespoons Olive Oil
  2. 1 Cup Diced Green or Red Pepper
  3. 1 Cup Diced Onions (Optional)
  4. 1 Cup Diced Ham
  5. 6 Large Eggs
  6. 1-1/2 Cups Cheddar or Swiss Cheese
  7. 3/4 Cup Heavy Cream
  8. 3/4 Cup Whole Milk

Directions

  • Preheat oven to 425 degrees with rack in the middle.
  • Spray a muffin tin with pan spray.
  • Heat olive oil in pan, add peppers and onions and sauté for 3-4 minutes.
  • Add ham and cook for another 2-3 minutes.
  • Place one tablespoon of the mixture into each muffin tin.
  • Combine eggs, cheese, cream, and milk in a bowl.
  • Pour an equal amount into each muffin tin.
  • Bake for 20-25 minutes until tops are brown and center is set.
  • Cool and remove from pan.
  • Place in individual freezer bags in serving sizes you will need for later.
  • Place in the microwave for 15-30 seconds and you are ready to go!
