These tasty and adorable “carrots” make a fun addition to an Easter brunch spread and, as an added bonus, are easy enough that kids can help.

Ingredients

  1. 8 Mini Croissants From Bakery
  2. 16 Parsley Stems
  3. 1 Pound Chicken Kitchen Rotisserie Chicken Salad
  4. Red And Yellow Food Coloring
  5. 2 Egg Whites

Directions

  • Preheat oven to 350°.
  • In small bowl, whisk together food coloring and egg whites to create orange color.
  • Place croissants on baking sheet and brush with egg white mixture.
  • Bake 5-7 minutes. Allow to cool.
  • Slice croissants in half to form triangle “carrots.” Stuff each with chicken salad.
  • Push parsley stem into chicken salad to create “carrot stem” on each.
  • Enjoy!
