Stuffed Artichokes

Ingredients

  1. 4 Artichokes
  2. 1 Cup Parmesan Cheese
  3. 1 Cup Bread Crumbs
  4. 1/2 Cup Diced Onion
  5. 2 Diced Garlic Cloves
  6. 1/2 Teaspoon Oregano

Directions

  • Preheat oven to 400 degrees.
  • Clean artichokes thoroughly and cut off stem and ½ of an inch from top of artichoke. Use a spoon to remove as much of the choke as you can.
  • To prevent premature browning, place trimmed artichokes in lemon water until ready to boil.
  • Boil artichokes in large pot until tender.
  • Heat onion and garlic in medium-large saucepan with a tablespoon of olive oil. When onions begin to brown, add bread crumbs, Oregano and Parmesan cheese stirring frequently to desired consistency.
  • Once tender, remove artichokes from water and allow them to drain upside down.
  • Use a spoon to put stuffing into the leaves and in the center of artichoke. Place stuffed artichokes in baking dish and drizzle lightly with olive oil and top with Parmesan cheese.
  • Cover with aluminum foil and back for 15 minutes covered. Remove foil and bake for another 5 minutes.
  • Allow to stand for 5 minutes before serving.
