We never met a sweet potato fry we didn’t like, but the addition of fresh herbs in this version takes it to a new level. Healthy sweet potatoes and baking rather than frying makes these a healthy and delicious choice!

Ingredients

  1. 4 Large Sweet Potatoes
  2. 2 2/3 Tablespoons Fresh Parsley, Chopped
  3. 2 2/3 Tablespoons Fresh Tarragon, Chopped
  4. 2 2/3 Tablespoons Fresh Rosemary, Chopped
  5. 2 2/3 Teaspoons Lemon Juice, Freshly Squeezed
  6. 2/3 Teaspoon Cumin
  7. Salt And Pepper To Taste
  8. 1/3 Cup Olive Oil

Directions

  • Preheat oven to 425 degrees.
  • Peel potatoes, and cut in half lengthwise. Cut each half into long wedges.
  • Place potatoes in large bowl. Coat with olive oil and remaining ingredients.
  • Bake 20-30 minutes, turning once, until crisp-tender.
