Savory Sweet Potato Fries
We never met a sweet potato fry we didn’t like, but the addition of fresh herbs in this version takes it to a new level. Healthy sweet potatoes and baking rather than frying makes these a healthy and delicious choice!
Ingredients
- 4 Large Sweet Potatoes
- 2 2/3 Tablespoons Fresh Parsley, Chopped
- 2 2/3 Tablespoons Fresh Tarragon, Chopped
- 2 2/3 Tablespoons Fresh Rosemary, Chopped
- 2 2/3 Teaspoons Lemon Juice, Freshly Squeezed
- 2/3 Teaspoon Cumin
- Salt And Pepper To Taste
- 1/3 Cup Olive Oil
Directions
Preheat oven to 425 degrees. Peel potatoes, and cut in half lengthwise. Cut each half into long wedges. Place potatoes in large bowl. Coat with olive oil and remaining ingredients. Bake 20-30 minutes, turning once, until crisp-tender.
