SausageWorks "The Greek God" Pasta
Bursting with flavor, this hearty meal works anytime of the year. Makes a great winter-time comfort food or can be refrigerated and served as a dinner salad on hot summer nights.
Ingredients
- 6 Links Of “The Greek God” Sausage From Sausageworks
- 1 Large Red Onion, Sliced
- 1 Large Red Pepper, Sliced
- 1 Large Yellow Pepper, Sliced
- 4 Cloves Garlic, Minced
- 1 Half Teaspoon Fresh Oregano
- 1 Half Teaspoon Fresh Thyme
- 32 Kalamata Olives Pitted And Sliced In Half
- 8 Ounces Feta Cheese
- 4 Tablespoons Balsamic Vinegar
- One Quarter Cup Olive Oil, Divided
- One Half Box Rigatoni Pasta
Directions
Place sausage in large sauté pan. Add enough water to just cover sausage. Bring to boil and cook about 10 minutes. While sausage is cooking prepare pasta according to directions on package. When sausage is finished cooking, drain water out of pan. Return pan to stove. Add 2 tablespoons olive oil and cook sausages until browned. Remove from pan and place on cutting board to rest. Return pan to stove and heat to medium. Heat tablespoon oil and add onion, peppers, garlic, oregano and thyme. Cook until onions and peppers are soft. While peppers and onions are cooking, cut sausage into 1/2” slices. Return sausage to pan and cook 2-3 minutes. In small bowl, whisk remaining olive oil and vinegar. In large bowl combine sausage, onion and peppers, pasta, olives and 1/2 feta. Pour oil and vinegar and toss to combine. Divide evenly among plates and sprinkle with remaining feta.
