SausageWorks Smoked Sausage Breakfast Fajitas
Our own Chef Joe created this hearty, flavorful breakfast recipe. It comes together in a flash and feeds a crowd.
Ingredients
- 2 Tablespoons Grapeseed Oil
- 1 Pound Peppers And Onions, Diced
- 1 Pack Sausageworks Holy Smokes Links, Cut Into Bite-Sized Pieces
- 1 Dozen Eggs
- 8 Ounces Sharp Cheddar Cheese
- 8 Flour Tortillas
Directions
Add oil to large sauté pan over medium high heat. Once pan is hot, add peppers, onions and sausage. Cook until onions start to lightly brown and sausage is cooked through. In medium bowl, whisk eggs together. Pour eggs into pan and stir with spatula to cook evenly, making sure to scrape bottom of pan. Once eggs are almost done, fold in cheese and allow to melt. Divide mixture between tortillas (heated if desired) and serve warm.
