SausageWorks & Local Grits Casserole

Ingredients
- 1 Pound Ground Sausageworks Sausage
- 1 Cups Local Stone Ground Grits (Slow Cooking)
- 1 Medium Onion, Diced
- 1 Cup Green, Red, Or Yellow Peppers, Diced
- 3 Cups Water
- 2 Tablespoons Butter
- 2 Cups Shredded Cheddar Cheese
- 2 Eggs
- 1/2 Cup Milk
- Salt And Pepper To Taste
Directions
Preheat oven to 350 degrees and spray a casserole dish with nonstick spray. Place water in a medium pot to boil for the grits. Add grits to boiling water. Stir grits occasionally for about 7 minutes until water is absorbed. While the grits are cooking, brown the sausage in a sauce pan until well done. Add onions and peppers and sauté until they soften. Add 2 tablespoons butter and 1 cup of cheddar cheese to the grits and stir until blended. Combine slightly beaten eggs with milk in a separate bowl. Add sausage, onions, and peppers and eggs and milk to grits. Salt and pepper to taste. Pour mixture into a casserole dish and top with remaining cheese. Bake for 30 minutes or when top is brown.
