SausageWorks Chorizo & Egg Breakfast Casserole
Nothing says brunch like a savory, flavor-y casserole. This one steals the show with the use of The Spicy Gonzalez from SausageWorks, our house-made chorizo sausage with chili pepper and spices.
Ingredients
- Cooking Spray
- 1 Tablespoon Vegetable Oil
- 1 Large Onion, Diced
- SausageWorks Farmers Daughter Hot Pork Sausage
- 1/4 Cup Pickled Jalapeños, Diced
- 1/2 Cup Cotija Cheese Or Queso Fresco, Crumbled
- 10 Eggs
- 2 Cups Milk
- 2 Tablespoons Cilantro, Chopped
- 1 Tablespoon Salt
- Sour Cream, Salsa, Hot Sauce, Avocado, Sliced (Optional, For Serving)
Directions
Preheat oven to 375° and coat 9x13” baking dish with cooking spray. In large pan, heat oil over medium. Add chorizo and onion and cook, stirring frequently, breaking up chorizo with wooden spoon. When fully cooked (about 10 minutes) stir in jalapeños. Transfer to baking dish and spread evenly on bottom of dish. Sprinkle cheese over sausage. In large bowl, beat eggs, whisking in milk, cilantro and salt. Pour over chorizo and cheese. Bake 45 minutes or until slightly browned on top and knife inserted in middle of dish comes out clean. Allow to cool 5 minutes before serving hot, topping as desired with sour cream, salsa, hot sauce and avocado.
