Raspberry Greek Yogurt Parfait
This creamy, sweet-tart dessert only looks decadent, using plain Greek yogurt makes it a healthy treat. We recommend serving in short glasses to appreciate the layers.
Ingredients
- 1 Cup Lowes Foods Frozen Raspberries, Slightly Thawed
- 1/8 Cup Sugar
- 1 Teaspoon Lemon Juice
- 1 1/2 Cups Plain Greek Yogurt
- 2 Tablespoons Maple Syrup
- 2 Full Graham Cracker Sheets
- Fresh Raspberries
Directions
In a small saucepan over medium heat, combine raspberries, sugar and lemon juice. Cook, stirring frequently to ensure the sugar doesn’t burn, 10 minutes or until raspberries break down. Force through a strainer to extract seeds, if desired. Allow to cool. Place graham crackers in Ziploc bag, seal and crush with back of spoon to create crumbs. In small bowl, stir together yogurt and maple syrup. Divide crumbs evenly in bottom of 2 dishes. Top each evenly with 1/2 yogurt mix, followed by raspberry purée, and then remaining yogurt. Top with fresh raspberries and serve.
