Raspberry Greek Yogurt Parfait

Ingredients

  1. 1 Cup Lowes Foods Frozen Raspberries, Slightly Thawed
  2. 1/8 Cup Sugar
  3. 1 Teaspoon Lemon Juice
  4. 1 1/2 Cups Plain Greek Yogurt
  5. 2 Tablespoons Maple Syrup
  6. 2 Full Graham Cracker Sheets
  7. Fresh Raspberries

Directions

  • In a small saucepan over medium heat, combine raspberries, sugar and lemon juice. Cook, stirring frequently to ensure the sugar doesn’t burn, 10 minutes or until raspberries break down. Force through a strainer to extract seeds, if desired. Allow to cool.
  • Place graham crackers in Ziploc bag, seal and crush with back of spoon to create crumbs.
  • In small bowl, stir together yogurt and maple syrup.
  • Divide crumbs evenly in bottom of 2 dishes. Top each evenly with 1/2 yogurt mix, followed by raspberry purée, and then remaining yogurt. Top with fresh raspberries and serve.
