Quinoa & Spinach Salad
Quinoa, a widely available and popular gluten-free grain, is the star of this fresh salad, combined with spinach and tomatoes and a light homemade dressing.
Ingredients
- 2 Cups Cooked Quinoa
- 2 Tablespoons Extra-Virgin Olive Oil
- 1 Teaspoon Garlic, Minced
- 4 Cups Spinach
- 1 Cup Grape Tomatoes, Halved
- 1/4 Teaspoon Nutmeg
- 1/4 Cup Lemon Juice
- Salt And Pepper, To Taste
Directions
In small pan, heat olive oil over medium heat. Add garlic and sauté 2-3 minutes. Place in large bowl and allow to cool slightly. Whisk in lemon juice and nutmeg. To bowl, add quinoa, spinach and tomatoes. Stir to combine.
