Ingredients

  1. 2 Cups Cooked Quinoa
  2. 2 Tablespoons Extra-Virgin Olive Oil
  3. 1 Teaspoon Garlic, Minced
  4. 4 Cups Spinach
  5. 1 Cup Grape Tomatoes, Halved
  6. 1/4 Teaspoon Nutmeg
  7. 1/4 Cup Lemon Juice
  8. Salt And Pepper, To Taste

Directions

  • In small pan, heat olive oil over medium heat. Add garlic and sauté 2-3 minutes.
  • Place in large bowl and allow to cool slightly. Whisk in lemon juice and nutmeg.
  • To bowl, add quinoa, spinach and tomatoes. Stir to combine.
