Mini Asparagus Quiche
This is a great recipe for breakfast, or even an on the go snack!
Ingredients
- 1 Can Refrigerated Crescent Rolls
- 1 Cup Sausageworks Soprano Sausage, Removed From Casing, Cooked And Crumbled
- 2 Tablespoons Olive Oil
- 1 Small Yellow Onion, Finely Diced
- 6 Stalks Asparagus, Finely Diced
- Handful Of Spinach
- 3 Large Eggs
- 1/4 Cup Milk
- Salt And Pepper, To Taste
- 2 Wedges Laughing Cow Cheese
Directions
Preheat oven to 350*. In skillet, heat olive oil over medium heat and sauté veggies until cooked through (4-6 minutes). Add in sausage and spinach and cook until spinach is wilted. Mix eggs and milk in a bowl, salt and pepper to taste. Add cooked veggies and sausage to egg mixture and stir until mixed. Press crescent roll dough into mini muffin tin and fill each with egg mixture. Break wedges of cheese into pieces and stuff into egg and veggie mixture. Bake until egg mixture is done. (15 minutes) Enjoy!
