Healthier Sweet Potato Casserole
Swapping out a few traditional ingredients for healthier ones in this comfort food classic lightens it up without sacrificing flavor. Now you don't have to wait for Thanksgiving to indulge!
Ingredients
- 3-4 Large Sweet Potatoes
- 3 Egg Whites
- 1/4 Cup Brown Sugar
- 1/2 Teaspoon Salt (Optional)
- 2 Tablespoons Butter
- 1/2 Cup Milk, Skim Or 1%
- 1 Teaspoon Ground Cinnamon
- 1/2 Teaspoon Ground Ginger
- 1 Teaspoon Vanilla Extract
- Cooking Spray
Directions
Preheat oven to 400°. Pierce sweet potatoes with fork, place on baking sheet and bake 45-60 minutes, or until soft. When cool enough to handle, peel o_ skin. Mash, measure 3 cups and add to large mixing bowl. (Save any extra for another recipe.) Add all remaining ingredients (except cooking spray) to bowl and mix well with large spoon or mixer on low speed. Lightly spray 3-quart casserole dish with vegetable oil. Spoon mixture into dish and sprinkle with more cinnamon. Lower oven to 350°. Bake casserole 30 minutes, or until hot. Enjoy!
