Greek Omelet in a Pita
Who says you don’t have time to make a hot omelet in the morning? Let Pick & Prep take the work out of it for you by doing the chopping in advance.
Ingredients
- 4 Large Eggs
- 2 Tablespoons Olive Oil
- 2 Tablespoons Water
- 2 Tablespoons Feta Cheese
- 1/2 Cup Chopped Red And Green Peppers
- 2 Pitas, Cut In Half
- Salt And Pepper To Taste
- Optional Humus
Directions
Heat olive oil in small sauce pan. Sauté peppers for 2 minutes. Mix egg, water, salt, and pepper in a small bowl. Pour egg mixture into pan and cook 3-5 minutes, stirring often. Turn off heat and add feta. Optional – spread humus in the pita pouch. Add egg mixture and you are ready to go.
