Greek Omelet in a Pita

Ingredients

  1. 4 Large Eggs
  2. 2 Tablespoons Olive Oil
  3. 2 Tablespoons Water
  4. 2 Tablespoons Feta Cheese
  5. 1/2 Cup Chopped Red And Green Peppers
  6. 2 Pitas, Cut In Half
  7. Salt And Pepper To Taste
  8. Optional Humus

Directions

  • Heat olive oil in small sauce pan. Sauté peppers for 2 minutes.
  • Mix egg, water, salt, and pepper in a small bowl.
  • Pour egg mixture into pan and cook 3-5 minutes, stirring often.
  • Turn off heat and add feta.
  • Optional – spread humus in the pita pouch.
  • Add egg mixture and you are ready to go.
