Gluten Free Corn Casserole

Ingredients
- 4 Ears of Local Corn
- 2 Eggs
- 1/4 Cup Local Honey
- 1/2 Cup Almond Milk
- 1/4 Cup Gluten Free Cornmeal
- 1/4 Cup Chopped Onions
- 2 Tablespoons Fresh Thyme
- Salt and Pepper to Taste
Directions
Preheat oven to 375 degrees. Remove kernels of corn from the cob. The ears should yield about 3 cups of corn. In a separate bowl, combine the eggs and honey. Use a whisk until the mixture is smooth. Add almond milk, cornmeal, onion, thyme, and corn and then whisk until combined. Salt and pepper to taste. Pour the mixture into a greased casserole dish and bake for 28-32 minutes. The casserole should begin to brown on top. Serve and Enjoy!
