Ingredients

  1. 4 Ears of Local Corn
  2. 2 Eggs
  3. 1/4 Cup Local Honey
  4. 1/2 Cup Almond Milk
  5. 1/4 Cup Gluten Free Cornmeal
  6. 1/4 Cup Chopped Onions
  7. 2 Tablespoons Fresh Thyme
  8. Salt and Pepper to Taste

Directions

  • Preheat oven to 375 degrees.
  • Remove kernels of corn from the cob. The ears should yield about 3 cups of corn.
  • In a separate bowl, combine the eggs and honey. Use a whisk until the mixture is smooth.
  • Add almond milk, cornmeal, onion, thyme, and corn and then whisk until combined. Salt and pepper to taste.
  • Pour the mixture into a greased casserole dish and bake for 28-32 minutes. The casserole should begin to brown on top.
  • Serve and Enjoy!
