Crisp Fall Harvest Salad
A colorful medley of tender spring mix, crisp Honeycrisp apples, tart cranberries, and crunchy pecans, sprinkled with roasted pumpkin seeds and sweet potato–infused granola for a seasonal touch. Creamy feta and a hint of fresh thyme bring balance, while a tangy Dijon vinaigrette ties it all together in every bite.
Ingredients
- 2 Tbsp Apple Cider Vinegar
- 1/4 Cup Olive Oil
- 1 Tbsp Dijon Mustard
- 1 Tbsp Honey
- 6 Cups Mixed Greens
- 1/4 Cup Dried Cranberries
- 1 Honeycrisp Apple
- 1/4 Cup Sweet Potato Granola
- 1/4 Cup Pecans
- 2 Tbsp Pumpkin Seeds
- 1/2 Cup Feta Cheese
Directions
Toss together mixed greens, dried cranberries, sliced honey crisp apple, granola, pecans, pumpkin seeds and feta. Wisk together apple cider vinegar, olive oil, Dijon and honey. Drizzle dressing over salad. Top with a little Thyme, toss all together and serve.
