Chicken, Peach & Basil Kabobs
A taste of Summer that the whole family will enjoy.
Ingredients
- 2 Large Chicken Breast
- 2 Peaches (Semi Soft)
- 2 Tbsp. Olive Oil (And Some For Coating)
- 4 Fresh Basil Leaf
- 1 Tsp. Fresh Ginger
- 1/2 Tsp. Chili Powder
- 1/4 Tsp. Salt
- 1/4 Tsp Black Pepper
- 10-Inch Wood Skewers
Directions
Combine olive oil, ginger, chili powder, basil, salt and pepper in a mixing bowl and set aside. Cut chicken into 1inch chunks and place in bowl with the seasoning mixture in step 1. Let chicken sit for 2-3 hours under refrigeration to allow seasoning to penetrate meat. Cut peaches into chunks to match the size of chicken. Just before kabob assembly, toss the peaches with the chicken to lightly coat with seasoning. Place peaches and chicken on skewer alternating each. The Skewers are now ready to cook. Grilling is recommended, however they can be seared in a pan or baked in the oven. Coat pan with oil to prevent sticking.
