Chicken Kitchen Creamy Chicken Spinach Casserole
Using our signature chicken kitchen rotisserie chicken, this creamy casserole is sure to be a family favorite.
Ingredients
- 2 Cups Torn 9 Grain Bakery Bread
- 2 Tablespoons Olive Oil
- Coarse Salt And Ground Pepper
- 4 Cups Spinach, Washed
- 1 Finely Chopped Medium Yellow Onion
- 1/2 Teaspoon Minced Garlic
- 1/4 Cup Low Sodium Chicken Stock
- 2 Tablespoons All Purpose Flour
- 1 1/2 Cups Fat Free Half-And-Half
- 1/2 Teaspoon Lemon Juice
- 1 Cup Shredded Chicken Kitchen Rotisserie Chicken
Directions
Preheat oven to 450 degrees. Combine torn bread with 1 teaspoon of oil and season with salt. Heat up 1 ½ teaspoons of oil in a medium pot and add spinach. Season with salt. Stir until wilted then rinse in colander and squeeze remaining water out. Coarsely chop spinach. Place 1 ½ teaspoons of oil back in pot, adding in onions and garlic. Season with salt and pepper and cook until onions soft. Place ¼ cup of chicken stock in pot and add in flour. Over time gradually pour in half and half and lemon juice. Bring mixture to a boil over high. Remove from burner and add in spinach and chicken. Place in baking dish, top with bread, place in oven for about 8 minutes then serve.
