Chicken Kitchen Chicken & Asparagus Crepes
This delicious recipe incorporates our mouth-watering rotisserie chicken to make a creamy filling for crepes
Ingredients
- 3 Cups Chicken Kitchen Rotisserie Chicken, Shredded
- 1 Tablespoon Olive Oil
- 1 1/2 Cups Asparagus, Chopped
- 1 Small Yellow Onion, Finely Diced
- 2 1/2 Cups Mushrooms, Diced
- 1 Clove Garlic, Mined
- 1/4 Cup Butter, Cubed
- 2/3 Cup Mozzarella Cheese
- 6 Slices Swiss Cheese
- 1 1/2 Cup Milk
- 1/4 Cup Flour
- 1/4 Teaspoon Salt
Directions
Preheat oven to 350 degrees. Sautee asparagus, onion, and garlic in olive oil until tender. Add mushrooms to pan and cook for 2 minutes longer. Remove from heat, stir in chicken and set aside. In a saucepan, melt butter over medium heat. Stir in flour with salt and pepper until smooth, gradually adding milk. Bring to a boil and cook for 2 minutes, stirring frequently. Remove from heat. Spread 1/2 cup of filling onto center of each crepe. Top with sauce and 1/2 piece of Swiss cheese. Roll up crepes and place seam side down into a greased baking dish Sprinkle with mozzarella cheese and bake for 20-25 minutes.
