Caprese Wrap With Chicken
Adding chicken turns a classic summer salad in to a meal, wrapping it in a tortilla makes it a perfect grab-and-go lunch. Make it gluten free by losing the wrap and placing it on a bed of extra spinach.
Ingredients
- 1 Cup Shredded Chicken Kitchen Rotisserie Chicken
- 4 Tortillas
- 1 Cup Chopped Baby Spinach
- 1/2 Cup Diced Tomato
- 8 Ounces Fresh Mozzarella
- 5 Basil Leaves, Chopped
- 2 Tablespoons Olive Oil
- 2 Tablespoons Balsamic Vinegar
- Salt & Pepper, To Taste
Directions
Combine chicken, spinach, tomatoes and basil leaves in large bowl. Slice mozzarella into 1/4 inch pieces and add to bowl. In small bowl, stir together olive oil and balsamic vinegar. Add to main bowl and toss to combine. Season to taste with salt and pepper. Divide ingredients equally between tortillas, wrap and serve.
