Broccoli Salad With Greek Yogurt Dressing
This creamy broccoli salad, which uses Greek yogurt in place of mayo, makes a guilt-free lunch or side dish. Leave out the bacon to make it even healthier as well as vegetarian.
Ingredients
- 1/2 Cup Plain Lowes Foods Greek Yogurt
- 2 Tablespoons Apple Cider Vinegar
- 1 Teaspoon Honey
- 1 Teaspoon Lemon Zest
- 1/4 Teaspoon Sea Salt
- 2 Heads Broccoli, Cut Into Small Florets
- 1 Cup Red Cabbage, Chopped
- 1/4 Cup Red Onion, Diced
- 1/4 Cup Golden Raisins
- 1/2 Cup Sliced Almonds
- 3 Green Onions, Sliced
- 3 Slices Sugar-Free Uncured Bacon, Cooked And Crumbled (Optional)
- Fresh Gourmet Cranberries Dried & Sweet
Directions
In small bowl, whisk together yogurt, vinegar, honey, lemon zest and salt. Chill in refrigerator. In large bowl, toss together broccoli, cabbage, onion, raisins, almonds, green onions, and bacon (if using). Add dressing and toss again to evenly coat. Enjoy immediately or refrigerate up to 4 days in airtight container. NOTES: This is easily customizable to your own tastes by adding in extras like cut grapes or dried cranberries and swapping out the almonds for your favorite nut.
