Beef and Kimchi Fried Rice Bowl

Ingredients
- 1 pound Certified Angus Beef ® ground beef
- 1-1/3 cups white long grain rice
- 1 teaspoon canola oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 3 scallions, thinly sliced, whites and greens separated
- 1 cup chopped kimchi
- 2 eggs, beaten
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
Directions
Cook rice according to package directions. Set aside. Heat oil in a large wok or frying pan over medium high heat, add ground beef and season with salt and pepper. Sear about five minutes while constantly stirring with a heatproof spoon or spatula. Stir in scallion whites and kimchi; sear while constantly stirring, about 3 minutes. Stir in cooked rice until evenly combined. Create a circular opening in the middle of the fried rice, about 4 inches in diameter. Add eggs to pan's hot center and vigorously stir briefly to cook. Re-combine all ingredients while constantly stirring. Stir in soy sauce and sesame oil. Divide fried rice among four bowls, garnish with scallion greens and serve.
