Description
The Vermont Creamery Story begins with this mild fresh goats' milk cheese. This award-winning fresh goat cheese is distinguished by its fresh milk taste, mild flavor and smooth texture. The process starts when fresh goats' milk is received from a network of family farms in Vermont and Canada and the milk is tested and pasteurized. Then the milk is placed into vats and the cheesemakers add a special selection of bacterial cultures that work overnight to produce flavor while coagulating and thickening the milk. The milk for cheese is now curd and drained in cheesecloth bags overnight. The curd is then shaped into logs and packed as fresh goat cheese
