Instructions
1. heat 2 tbsp oil in Dutch oven and sear 2.5 lb of pot roast, 5 minutes per side. 2. Preheat oven to 275 degrees F. Chop 4 cups vegetables and toss with 2 tbsp flour to coat. 3. Add vegetables, Kinder's seasoning, 2 cups beef stock (or water) and 1 tbsp tomato paste to Dutch oven. 4. Cook in oven for 2.5 hours and rest 15 minutes before serving.
